First, if you are having a religious or cultural wedding, consider what aspects of that culture would work well with your own personality and tastes. Some religions follow a somewhat strict "code of conduct" when it comes to marriage ceremonies, but that doesn't mean you can't add some highlights of your own.
Another thing to consider is the theme of your wedding. Irish and Scottish celebrations have some very nice unique traditions that you may wish to use, while a historical period wedding, such as one that would be held in Medieval times, has it's own flavor that's a bit different from the norm.
